It's been a while since I last posted something/anything. However, no rhyme or reason for it.
As with most of my posts this one is about food. A couple of nights ago I wanted a late-night snack, sweet snack to be precise. I searched my kitchen to see what I had on hand, even if it meant me making something at that hour. I didn't have much; but I did have a box of graham cracker crumbs, and so I decided I was going to make a cheesecake. Two days later - voila!
I didn't follow the recipe to a tee. It called for one can of condensed milk to one 8oz package of cream cheese. I thought that was a bit much, since the crust already had sugar. I could hear my husband remarking/commenting - "too sweet." I also added about 1/4 teaspoon of lemon zest (adding lemon zest is just so fancy to say - hahaha). I kept giving my son a taste as I was mixing the filling to figure out if it was sweet enough; his reaction - mmm.
We - my son and I - are yet to try it. It's in the freezer - final stage. Here's a peek:
